Avocado Eggs with Bacon & Cheese are a quick and easy meal for any time of the day! Being low in carbs and big on flavor, you can't resist them!

Food!  Oh, how I love food!  Anyone who knows me is well-aware of this fact.  And I am not partial.  Sweet, savory, creamy, cheesy...you name it, I probably like it.  I like to say that I inherited this trait from my dad.  Whenever we are out to eat, the two of us always blow others away with how much we can eat.  We have even blamed my dad for a few local restaurants going out of business.  Their main mistake...offering some sort of "All You Can Eat" special and allowing him to partake.

Sadly, along with my passion for food comes a rather negative side affect.  As my age climbs, it seems that my metabolism is heading in the opposite direction.  To try to combat this inevitable fact, I have been focusing lately on trying to cut back on the carbs.  The awesome thing is, I have discovered that I can do just that but still enjoy so many of the amazing flavors that I love!  And that is just what I do with my Avocado Eggs with Bacon & Cheese.  

Now, I will admit, I still like a big old plate of creamy, cheesy seafood alfredo, but I have also fallen in love with so many healthier alternatives.  And I hope you do too!  Check out my simple recipe below for my Avocado Eggs with Bacon & Cheese!

Ingredients for Avocado Eggs with Bacon & Cheese:

  • avocado
  • eggs
  • bacon
  • shredded cheese
  • salt and pepper

Avocado Eggs with Bacon & Cheese are a quick and easy meal for any time of the day! Being low in carbs and big on flavor, you can't resist them!

Avocado Eggs with Bacon & Cheese are a quick and easy meal for any time of the day! Being low in carbs and big on flavor, you can't resist them!

Directions for Keto Loaded Avocado Eggs:

  1. Preheat oven to 425°.
  2. Cut your avocado in half and remove the pit.
  3. Using a spoon, scoop out some of the avocado so an egg will fit in it. (That extra avocado is a perfect pre-meal snack!)
  4. Crack one egg into each side of your avocado.
  5. Top with salt, pepper, bacon, and cheese.
  6. Cook for about 15 minutes or until cheese is bubbling and slightly browned.  Enjoy!

  • 1 avocado
  • 2 eggs
  • 2 tbsp chopped bacon, cooked
  • 2 tbsp shredded cheese
  • salt and pepper

Instructions

  1. Preheat oven to 425°.
  2. Cut your avocado in half and remove the pit.

  2. Really great recipes! You can even choose which recipes you want to see down to how many ingredients you want. I love it and have tried a couple of the easy ones.

  3. After cooking and cooling, how long will they last in fridge? I have a bag of mini avocados that I won't be able to eat, trying to figure out what to do with the remaining.
