  • ½ cup butter, softened
  • 1 cup sugar
  • 2 teaspoons lemon juice
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups blueberries, fresh
  • 3/4 cup buttermilk
  • Topping: 3 tablespoons sugar

Directions for Homemade Blueberry Coffee Cake:
  1. Preheat the oven to 350ºF.
  2. Combine butter, sugar, and lemon juice until light and fluffy.
  3. Add eggs and vanilla.
  4. In a separate bowl, combine flour, baking powder, and salt.
  5. Slowly add flour mixture and buttermilk to the batter, alternating the two.
  6. Add blueberries.
  7. Pour batter into a greased 9x9 pan and top with 3 tablespoons of sugar.
  8. Bake for 40-45 minutes or until top is golden brown.
