Salmon omelets are the perfect way to start the day on a healthy, satisfying note. Perfectly cooked eggs envelope salmon chunks, onions, bell peppers, and Colby Jack cheese to create a high-protein feast that powers you through the morning.

I love omelets for breakfast, and I love salmon. So I put them together! These are a favorite breakfast of mine because they're so rich in protein, omega fatty acids, and veggies. And of course, we can't forget all that cheese!

Ingredients

This recipe only takes a handful of simple ingredients to make, and other than the salmon, you might just have everything you need in your kitchen right now!

  • Olive oil
  • Skinless salmon filet, cut into ½ - inch chunks
  • Finely chopped onion
  • Finely chopped sweet peppers (I used green, red, orange, and yellow)
  • Salt
  • Pepper
  • Eggs
  • Shredded Colby Jack cheese

Instructions

Making these omelets is no more difficult than any other omelet recipe. The only extra step is cooking the salmon and vegetables, and that only takes about 5 extra minutes. It's super easy!

1: Cook the salmon, onions, peppers, salt, and pepper on medium heat until the salmon is cooked through and the onions are translucent. Set them aside.

2: Whisk eggs in a small bowl.

3: Spray the skillet with nonstick spray and add half the eggs. When the eggs begin to set, loosen the edges, allowing the center to cook, as well.

4: Add half the salmon mixture and top with cheese.

5: Fold over the omelet and cook until the cheese is melted.

6: Repeat this process to make your second omelet.

7: OPTIONAL: Top omelet with additional onions, peppers, and cheese.

Why did my omelet burn?

The heat was too high. That's the culprit every time. If the heat is too high, the eggs will cook too fast. This leads to the eggs becoming overcooked and brown by the time the filling is hot and melty.

Ingredients

  • 3 tbsp olive oil
  • 8 oz skinless salmon filet, cut into ½ - inch chunks
  • ¼ cup finely chopped onion
  • 1 cup finely chopped sweet peppers (I used green, red, orange, and yellow)
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 eggs
  • ½ cup shredded Colby Jack cheese

Instructions

  1. Heat olive oil in a medium skillet over medium heat.
  2. Add salmon, onions, peppers, salt, and pepper.  Cook for about 5 minutes until salmon is cooked through and onions are translucent.  Remove mixture from skillet.  Set aside.
  3. Whisk eggs in a small bowl.
  4. Spray the same skillet with non-stick cooking spray.  Pour half of beaten eggs into the heated skillet.  As eggs begin to set, loosen the edges, allowing the center to cook also.
  5. Place half of the salmon mixture on the set eggs and sprinkle half the cheese over top.
  6. Fold the omelet in half and allow it to sit for one minute.
  7. Repeat this process to make your second omelet.
  8. OPTIONAL: Top omelet with additional onions, peppers, and cheese.
