Caprese Pasta Salad
If you have been hanging around my blog for a while, you are well-aware that I like to experiment. You also know that simplicity is the name of the game for me. I just love throwing something together with as few ingredients as possible and wowing my guests! I just get a kick out of the look on their faces when I tell them how easy a recipe is. Today, I am here to share with you one of my easiest, but very impressive, recipes! Caprese Pasta Salad has just three main ingredients but tastes like a million bucks!
In addition to being easy, this Caprese Pasta Salad can also be made quickly. The first time that I made it, it literally took me 15 minutes. I got a last-minute invitation from my mom for dinner. I always like to take something, but I knew the clock was ticking. I had to come up with an idea fast! And boy was it a hit! No one believed me when I told them how fast and easy it was!
While I had my pasta boiling, I quickly sliced my cherry tomatoes. Next, thankfully I had just been to Sam's Club and grabbed some marinaded fresh mozzarella (see the photo below). Perfect! And the olive oil and basil marinade was a convenient sauce for my salad. That was it! A little salt and pepper to taste and done!

Ingredients:
16 oz. pasta of your choice (cooked)
8 oz. mozzarella pearls (marinaded in olive oil and basil)
1 cup cherry tomatoes (sliced)
salt & pepper
Directions:
Step 1: In a large bowl, mix cooked pasta, mozzarella pearls, and tomatoes together.
Step 2: Add 1/4 cup of the olive oil blend marinade.
Step 3: Salt and pepper to taste!
