Caramel Chocolate Chip Cookie Bars
As an absolute lover of food, my mind is always spinning, thinking of new ideas to put on our table. Just like any mom, I know I have my go-to recipes that I make often, but there is just something about hanging out in the kitchen, experimenting with ingredients and creating something sensational!
One particular day, my littlest peanut asked if we could make cookies. My Vanilla Pudding Chocolate Chip Cookies to be exact. If you have not yet tried them, you must! They are, by far, the softest, chewiest cookies I have ever eaten. While I do love them, on this particular day, I wanted to get a little creative and mix up something new. This caused a bit of an argument with Emzlee, though. She was determined to eat some cookie dough, and I really couldn't deny the fact that I would enjoy that as well.
That is when the idea came to me! Make the same yummy cookie dough along with some ooey-gooey caramel and prepare to eat something awesome! And that is just what we did! Emzlee and I created Caramel Chocolate Chip Cookie Bars, and I can guarantee they will be made again and again in our house!

Caramel Chocolate Chip Cookie Bars Ingredients
1 cup butter, softened
3/4 cup brown sugar
1/4 cup white sugar
2 eggs
instant vanilla pudding (3.4 oz.)
2 tsp. vanilla, divided
2 1/4 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
3/4 cups milk chocolate chips
11 oz bag caramel bits
1/4 cup milk
Directions for Caramel Chocolate Chip Cookie Bars
Cookie layer:
Preheat oven at 350 degrees.
Blend butter and sugars together.
Mix in eggs.
Add pudding and vanilla. Blend.
Mix in 1 1/4 cups flour, all baking soda, and all baking powder until mixture is uniform.
Add remaining 1 cup flour and blend again.
Finally add chocolate chips.
Press 2/3 of mixture into a greased 9x13 cake pan. Set remainder of dough aside.
Caramel layer:
In a medium saucepan, combine caramel bits and milk over medium heat until melted and well-blended. Stir continuously to avoid burning.
Add vanilla and mix completely.
Pour caramel mixture over cookie layer and spread evenly.
Final Steps:
Break the remaining cookie dough into pieces and sprinkle them on top of the caramel layer.
Bake at 350 degrees for 30 minutes or until top turns golden brown.
