Homemade Apple Pecan Cheesecake
FAMILY. FUN. FOOD. If I had to sum up our holiday gatherings in three words, that would be it.
First, FAMILY. I was raised to believe that family is such an important part of life. They are there to love you and support you unconditionally, and that is just what my family does.
Second, FUN. It is a guarantee that our laughter will rarely stop. Whether Pa is talking about the good old days, the little ones are putting on some sort of performance, or my uncles are debating which of them was the meanest during childhood, tears of laughter will be shed.
Finally, FOOD. And more FOOD. Each year, as a holiday approaches, our menu is assigned and sent out. It is always fun to see what part of the feast I will be in charge of. This year, I was assigned to bring desserts. Now, I automatically know that one of my desserts has to be good old pumpkin pie ~ my mom just can't have a holiday meal without it. However, I do have a little freedom on my second sweet treat.
After some deliberation, I have decided to make my yummy Homemade Apple Pecan Cheesecake. A perfect crust covered with creamy, flavorful cheesecake, all topped off with an apple-pecan combination that will put a smile on your face!
Ingredients for Homemade Apple Pecan Cheesecake:
- 1½ cups graham cracker crumbs
- ¼ cup butter, melter
- 1¾ cup brown sugar, divided
- 4 pkg (8 oz. each) cream cheese, softened
- 1 tsp vanilla
- 1 cup sour cream
- 4 eggs
- 4 cups apples, peeled and chopped
- ¾ cup pecans, chopped
- 1 tsp ground cinnamon
Directions for Homemade Apple Pecan Cheesecake:
1. Preheat oven to 325°F.
2. Prepare a 9x13-inch by lining it with foil.
3. Combine graham cracker crumbs, ¼ cup brown sugar, and butter. Press into pan.
4. Bake 10 minutes.
5. Beat cream cheese, 1 cup brown sugar, and vanilla until smooth.
6. Add sour cream and blend.
7. Add eggs, one at a time, blending after each one.
8. Pour mixture over baked crust.
9. Mix ½ cup brown sugar, apples, pecans, and cinnamon. Spread evenly over cream cheese mixture.
10. Bake 65 minutes. Cool and refrigerate for 4 hours.
