Low-Carb Zucchini Patties are a delicious side dish that you will make again and again...healthy, light, and filled with flavor.

As a mom, I am always experimenting with healthy recipes, hoping and praying that my children will enjoy them.  I know I always have my fallback favorites, but I like trying something new every now and then.  As I was getting ready to make dinner, I caught a glimpse of a zucchini that had been on the counter for quite some time.  While I could definitely whip up some Homemade Zucchini Bread, I wanted to see if I could sneak it into our dinner instead.  And that is just what I did with these Low-Carb Zucchini Patties.  

As I watched each of my kiddos take their first bite, I held my breath, waiting for their reactions.  And just like that, they took a second bite, and a third.  No complaints, only compliments.  I am not sure about your household, but this was a big WIN for me!  Low-Carb Zucchini Patties will definitely make an appearance often on our dinner table!  And I am sure they will on yours as well.

Ingredients for Low-Carb Zucchini Patties:

  • 2 cups zucchini, grated
  • 2 eggs, beaten
  • 1/4 cup chopped onion
  • 1/2 cup coconut flour
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 tsp salt

Directions for Low-Carb Zucchini Patties:

  1. Combine zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt until mixed well.
  2. Heat a skillet over medium heat with a small amount of olive oil. When oil is heated, place large spoonfuls of mixture into skillet and gently flatten them into patties about ½-inch thick.
  3. Cook for a few minutes on each side until golden brown.
