Low-Carb Zucchini Patties
As a mom, I am always experimenting with healthy recipes, hoping and praying that my children will enjoy them. I know I always have my fallback favorites, but I like trying something new every now and then. As I was getting ready to make dinner, I caught a glimpse of a zucchini that had been on the counter for quite some time. While I could definitely whip up some Homemade Zucchini Bread, I wanted to see if I could sneak it into our dinner instead. And that is just what I did with these Low-Carb Zucchini Patties.
As I watched each of my kiddos take their first bite, I held my breath, waiting for their reactions. And just like that, they took a second bite, and a third. No complaints, only compliments. I am not sure about your household, but this was a big WIN for me! Low-Carb Zucchini Patties will definitely make an appearance often on our dinner table! And I am sure they will on yours as well.

Ingredients for Low-Carb Zucchini Patties:
- 2 cups zucchini, grated
- 2 eggs, beaten
- 1/4 cup chopped onion
- 1/2 cup coconut flour
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 tsp salt
Directions for Low-Carb Zucchini Patties:
- Combine zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt until mixed well.
- Heat a skillet over medium heat with a small amount of olive oil. When oil is heated, place large spoonfuls of mixture into skillet and gently flatten them into patties about ½-inch thick.
- Cook for a few minutes on each side until golden brown.

If you are not concerned about your carb count, all-purpose flour will also work well!
