Homemade Zucchini Bread
Where did summer go? I can’t believe we are once again approaching a lovely Wisconsin winter. Even though the sun has been shining, there is a chill in the breeze that makes me sad. The lush, green trees are quickly turning into bright shades of red, orange, and yellow. While this may be a beautiful scene, I am well-aware that the cold temps and strong winds of autumn will soon turn to snow.
In my eyes, there is only one way to combat this! It’s the perfect time to turn on the oven and bake something delicious! And that is exactly how I used this gigantic zucchini from my aunt and uncle’s garden! I whipped up a double-batch of my Grandma Joan’s Homemade Zucchini Bread! Our house warmed up a bit, the aroma was mouth-watering, and we all got to enjoy grandma’s amazing Homemade Zucchini Bread!

Ingredients for Homemade Zucchini Bread:
- 2 cups sugar
- 3 cups all-purpose flour
- ½ tsp salt
- 2 ¾ tsp cinnamon
- ¼ tsp baking powder
- 1 tsp baking soda
- 3 eggs
- 1 cup vegetable oil
- 2 ½ cups zucchini, grated
Directions for Homemade Zucchini Bread
- Mix all dry ingredients in a large mixing bowl.
- Add eggs and oil and mix until smooth.
- Finally, add grated zucchini.
- Pour batter into two large greased bread pans.
- Bake at 350° for 1 hour.
