When I want delicious flavor and a crunchy coating without all the frying, I make these baked cod sandwiches. My family loves them, and I love that they're better for us than traditional fried fish sandwiches.

Cod Sandwiches

These cod sandwiches are a healthy version of fried fish sandwiches with breaded baked cod, lettuce, tomato, and tartar sauce on a soft bun.

  • 2 - 8 oz cod filets
  • 1 tbsp olive oil
  • 2 tbsp grated parmesan cheese
  • 2 tbsp Italian style breadcrumbs
  • ½ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp pepper
  • 4 sub buns
  • Optional Toppings:
  • tartar sauce
  • lettuce
  • tomatoes


  1. Preheat oven to 400ºF.
  2. Blot cod filets with paper towel to absorb the moisture.
  3. In a small mixing bowl, combine olive oil, parmesan cheese, breadcrumbs, salt, garlic powder, and pepper.
  4. Press mixture onto both sides of the filets.
  5. Place breaded filets on a greased baking sheet.
  6. Bake for 18-20 minutes or until cod flakes apart with a fork.
  7. Spread tartar sauce on buns.  Add lettuce and tomatoes.
  8. Place half of a filet on each bun to complete your sandwich.
