Homemade Zucchini Cake with Cream Cheese Frosting
Now that the summer heat has gone and the flurries have started to fall, I find myself hanging out in my kitchen more and more. There is just something about filling my house with warmth from my oven and the aroma from a yummy dessert. My children get so excited when they come home from school and immediately know that I have been baking.
And when they find out it is my grandma's Homemade Zucchini Cake with Cream Cheese Frosting, they just can't resist. I still remember being their age and always asking for "just one more piece." And just like grandma, I can't say no!

Ingredients for Homemade Zucchini Cake with Cream Cheese Frosting:
Cake:
- 1 cup zucchini, shredded
- 1 cup sugar
- ½ cup oil
- 2 eggs
- 1 ¼ cups flour
- 1 teaspoon cinnamon
- ½ tsp salt
- ½ tsp baking powder
- ¼ tsp baking soda
Frosting:
- 3 ounces cream cheese, softened
- 4 tbsp butter, softened
- 1 tbsp milk
- ½ tsp vanilla
- 2 cups powdered sugar
Ingredients for Homemade Zucchini Cake with Cream Cheese Frosting:
- Preheat oven to 350°F.
- Mix together zucchini, sugar, oil, and eggs.
- Combine the flour, cinnamon, salt, baking powder, and baking soda in a separate bowl.
- Gently add dry ingredients into the wet.
- Spread the batter into a greased 8x8 baking pan.
- Bake for 28-32 minutes. Cool completely before frosting.
- For frosting, beat together the cream cheese and butter until smooth. Mix in milk, vanilla, and powdered sugar until uniform. Spread onto cool cake.
