Red chicken is one of my favorite ways to prepare chicken. I just love that sweet and tangy combo of ketchup, garlic, onions, and peppers. It's a flavor that always makes my mouth happy, and my family feels the same way.

1: Cook the vegetables over medium heat until tender. Set aside.

2: Toss the chicken with flour, season with salt and pepper, and cook until browned.

Tips:

  • Cook your vegetables until tender and no further. You don't want them mushy.
  • Your chicken should be cut into 1-inch cubes for ease of eating.

Red Chicken

This delicious red chicken recipe is sweet, tangy and loaded with tender chicken, onions, mushrooms, and bell peppers.

Ingredients

  • 1 1/2 lbs boneless, skinless chicken breast, cut into 1-inch chunks
  • 1/2 cup flour
  • 4 tbsp oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup ketchup
  • 2 tbsp garlic, minced
  • 1 yellow onion, sliced
  • 1 cup sliced sweet peppers (red, orange, or yellow)
  • 2 cups fresh mushrooms, sliced

Instructions

  1. Place 2 tablespoons of oil into a large skillet over medium heat. Allow oil to heat up for 2 minutes.
  2. Add onions, mushrooms and peppers. Cook for 5-7 minutes or until tender, stirring often. Remove from pan and set aside.  
  3. Heat 2 tablespoons of oil in the same large skillet over medium heat. 
  4. While oil is heating, place chicken chunks in a bowl and sprinkle flour over top.  Toss the chicken until all pieces are coated with flour.
  5. Add breaded chicken to your prepared skillet.
  6. Season with salt and pepper.  Stir often until chicken is lightly browned and thoroughly cooked.
  7. Reduce heat to medium-low.  Add garlic and stir for 1 to 2 minutes. 
  8. Add ketchup and stir until ketchup starts to bubble. Ketchup may darken slightly. 
  9. Add vegetables and allow them to reheat. 
  10. Serve over rice or pasta.
