When I was growing up, I enjoyed getting into the kitchen and baking with my mom. It was our special time together. She taught me so much about cooking. One of my mom's favorite things to make was homemade fruit pies. She would always say that fruit pies are very easy to make. You need very few ingredients, and they are all staples in your kitchen.
This Rhubarb Blueberry Pie recipe is adapted from my time in the kitchen with my mom. She loved cooking with rhubarb because it leaves that little crunch in a pie. Though, I think she liked to put rhubarb in sweets that she baked because it was her way of getting us picky kids to eat a different vegetable.

Can I use frozen blueberries for this pie
Yes, you can use frozen blueberries for this pie. There is no need to thaw them before adding them to your pie. Using frozen blueberries may make your pie filling a little thinner but it will still be delicious.
Is it better to use fresh or frozen blueberries
It's really a matter of personal choice. Fresh blueberries will make your pie filling sweeter and more flavorful, however frozen blueberries can usually be found in larger quantities for less money. Frozen blueberries can thin out your pie filling. I like to use fresh blueberries for the sweeter taste but use whichever you have on hand.
Should I use frozen or refrigerated pie crust
There is no difference in taste or texture when using a frozen or refrigerated pie crust. Use whatever is convenient and can be found on sale. I typically use refrigerated pie crust, but that's purely just a habit on my part.
What is rhubarb
Rhubarb is a vegetable that tastes similar to a very tart grape. It has long leafy greens and slender stalks. Rhubarb season runs from April through June but you can generally find rhubarb all year round in the grocery store.
How do I store fresh rhubarb
Remove the leaves and stalks of your rhubarb. Cut it into smaller pieces. It keeps best in a container covered with plastic wrap, stored in your refrigerator.
Can I use frozen rhubarb for this recipe
Yes, you can absolutely use frozen rhubarb for this recipe. Just make sure to thaw it before adding it to your pie.
Is it necessary to cook the rhubarb
Do not cook the rhubarb unless you're going to eat it right away or plan on freezing it. Cooking or heating rhubarb destroys the pectin that binds the cells together, leaving it soggy and mushy. Cooking your rhubarb will also change its color to a brownish hue which won't look very appetizing in this beautiful pie.
How do I pick fresh rhubarb at the grocery store
Rhubarb is usually found in the produce section of your grocery store. It should be firm and not soft or mushy. Make sure that there aren't any brown spots on the leaves since that means it has been sitting around too long.
Can I freeze this pie
Yes! You can easily freeze this pie and it will last several months in the freezer. Make sure you wrap it tightly with plastic wrap so that no air or moisture gets in there to damage your pie crust.I like to wrap my pie in plastic wrap twice and then place inside a freezer bag to make sure that my pie is completely protected in the freezer.
What is the thickener in this pie
Flour is the thickener in this homemade pie. There's no need to use pectin or cornstarch to thicken your pie, the flour does a great job.

Store Rhubarb Blueberry Piein the fridge until you are ready to serve. You can warm a slice of pie in the microwave or oven if you like to enjoy your pie warm. I like to warm my slice and then top with ice cream. You can store your pie for up to five days in the fridge.

Absolutely, you can make this pie up to 48 hours in advance if you are not planning to freeze your pie. If you are freezing your pie then you can make it up to three months in advance.

- blueberries
- white sugar
- all-purpose flour
- butter
- pie crusts
How to make Blueberry Rhubarb Pie
Step 1. Preheat the oven to 450 degrees F (230 degrees C).
Step 2. Combine sugar and flour. Sprinkle 1/4 of it over the pastry on a pie plate. Combine rhubarb and blueberries and heap them over this mixture. Sprinkle it with remaining sugar and flour. Dot with small pieces of butter.
Step 3: Cover with top crust.
Step 4. Place pie on lowest rack in oven. Bake for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and continue baking for 40 to 45 minutes. Serve warm or cold.
