For those of you that follow my blog regularly, it is pretty obvious that I LOVE to eat! And unfortunately, I tend to focus on those ooey-gooey desserts and creamy pastas that do not particularly get along with my scale. So, in an attempt to make up for all my guilty food pleasures, I have been trying really hard to experiment with healthy and nutritious choices that are also delicious!
I will be completely honest that there are times when I fall short and get a big "thumbs down" from my kiddos. However, I have been lucky enough to create several healthy choices that are kid-approved! And today, I want to share one of them with you! This Roasted Parmesan Cauliflower is roasted and seasoned to perfection! And if you are anything like our family, you will fall in love with the natural flavors of this delicious and nutritious side dish immediately!

I truly hope that you enjoy this Roasted Parmesan Cauliflower as much as we do. Delicious food is wonderful, but when I know it is also healthy and nutritious...I love it even more!
- 1 large head cauliflower
- 2 tbsp butter, melted
- 2 tbsp olive oil
- 2 tbsp parmesan cheese, grated
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp parsley flakes
- Preheat oven to 400 degrees.
- Break cauliflower into small pieces.
- Combine remaining ingredients and pour mixture over cauliflower florets.
- Toss until completely covered.
- Place onto a baking sheet and bake at 400 degrees for 30-35 minutes or until cauliflower is tender.
