So, a majority of the time, when writing about a recipe or crafty creation, I have a clever story that accompanies it. I not only like sharing my ideas, but I love sharing my stories, with the hopes that I can make someone smile and inspire them in some way.
Today, however, is a bit different. My only motivation for creating these Strawberries & Cream Egg Rolls came by staring at a bucket of strawberries. That was it. While trying to decide how I was going to use them, my brain started churning. I wanted to be a bit adventurous and try something new. After several possible ideas, it came to me. I love egg rolls and I love fruit, but I have never had fruit in an egg roll. That had to change!
I made a quick trip to the grocery store and was ready to create! Check out the recipe below so you too can try this sweet, simple, and decadent dessert that is sure to impress!
8 egg rolls wrapper
2 cups strawberries, mashed
1/2 cup sugar
1 cup heavy whipping cream
4 oz cream cheese, softened
Step 1: Preheat oven to 400 degrees.
Step 2: Combine mashed strawberries with 1/4 cup sugar. Set aside.
Step 3: Beat heavy whipping cream with 1/4 cup sugar on high until it firms up and forms peaks. Set aside.
Step 4: Spread cream cheese on egg roll wrapper, being sure to get it on one corner to help seal the egg roll later.
Step 5: Add strawberry mixture to the center of the egg roll wrapper.
Step 6: Form egg roll by referencing the photos below.
Step 7: Place egg rolls on a greased baking sheet.
Step 8: Bake for 18 minutes or until egg roll wrappers are golden brown.
Finally, the time has come! Your Strawberries & Cream Egg Rolls are ready to be devoured! Place a generous amount of that homemade whipped cream right on top and dive in! Now, as I said in the beginning, this particular post doesn’t include a story, but the more I think about it, I do think it holds a bit of inspiration!
