Sausage & French Toast Roll-Ups
"Mom, are you making real food for breakfast?" I hear this question every morning! I always have to laugh. I don't believe I have ever fed my children "fake" food, but I know exactly what they mean. Basically, do they need to fend for themselves and eat cereal, a bagel, toast, etc. or am I making a hot breakfast.
When our house is fairly under control and we are not rushing to get out the door, I love making breakfast for my family. They are pretty open to anything I make, but they do have their favorites. One common request is my Puffy Oven Pancake, but I am always experimenting with easy meals that my family will love. I struck gold with these Sausage & French Toast Roll-Ups. I typically have to make two batches because they literally disappear as soon as they hit the table.

Ingredients:
14 slices of bread
12 oz breakfast sausage links (I use Johnsonville)
2 eggs
1/8 cup milk
1/2 tsp white sugar
1/2 tsp ground cinnamon
Directions:
Step 1: While the sausages are cooking, in a small mixing bowl, combine eggs, milk, sugar, and cinnamon. Set aside.
Step 2: One slice at a time, cut crust from the bread and flatten it on a flat surface.
Step 3: Next, roll one sausage in the slice of bread.
Step 4: Submerge roll-up in the egg mixture and place it in a greased skillet.
Step 5: When all 14 roll-ups are prepared, turn heat to medium.
Step 6: Cook roll-ups until lightly browned on all sides.
