Oh yeah!  I am a seafood lover!  Whether it is alone, over pasta, or wrapped up in sushi...I love it!  There is just something about the natural flavors that are packed inside, not to mention seafood is a rich source of protein, vitamins, and minerals.  In addition to this, I am also all about easy, tasty meals that can be put together in minutes.  Inspired a bit by my Grilled Turkey & Pepper Jack Cheese and my Crab & Cream Cheese Crescent Ring, I wanted to create a new sandwich.

And that was the first time I enjoyed a Creamy Crab Grilled Cheese!  Oh my!  So simple, but absolutely delicious!  It is a perfect, quick lunch that I have definitely eaten again and again.  And when I am eating alone, it is so convenient to store the remaining crab mixture in the fridge for the next day!  And this also guarantees me another scrumptious, easy lunch!  Check out the yummy, simple recipe below so you too can enjoy a Creamy Crab Grilled Cheese!

Ingredients for a Creamy Crab Grilled Cheese

16 oz. imitation crab, chopped
4 green onions, chopped
1/2 cup mayonnaise
1/2 tsp salt
1/4 tsp pepper
sliced cheese of choice
bread of choice
butter

Directions for a Creamy Crab Grilled Cheese

Step 1: Butter the outsides of each piece of bread. Set aside.
Step 2: Combine crab meat, onions, mayonnaise, salt, and pepper in a medium mixing bowl.

Step 3: Spread crab mixture on one piece of bread, completely filling it.
Step 4: Evenly place cheese on the other piece of bread.

Step 5: Fold into a sandwich. Grill it in a frying pan over medium heat until bread is crispy and golden brown.
