Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts or chicken thighs
  • 1 cup shredded carrots
  • 1 medium onion, sliced
  • 2 celery ribs, sliced
  • 28 oz canned tomatoes, diced and undrained
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tbsp ground cinnamon
  • 1 tsp salt
  • 2 tsp pepper

Instructions

  1. Spray your slow cooker with cooking spray. 
  2. Placed chicken in your greased slow cooker. 
  3. Season chicken with cumin, coriander, cinnamon, salt, and pepper.
  4. Add the canned tomatoes, celery, onion, and carrots. 
  5. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours or until the chicken is cooked. 
  6. Once cooked, remove chicken from slow cooker and shred using two forks. 
  7. Return the chicken to your slow cooker and stir until combined. Serve chicken and vegetable mixture over rice, pasta, or mashed potatoes.
