Air fryer sugar cookie whoopie pies combine perfectly cooked, air-fried sugar cookies with a rich cream filling and finishes it all off with sprinkles! They're as fun as they are delicious.

Could there be anything better than sugar cookies? Actually yes. These whoopie pies! You can't get more sweet and rich than buttercream frosting sandwiched between two perfectly cooked sugar cookies.

Air Fryer Sugar Cookie Whoopie Pies

Whoopie pies are just about the best dessert ever invented if you ask me. Two cookies with frosting in between them? I can't think of anything better. These cookies are the perfect example of that.

Ingredients

It only takes a few basic kitchen staples to make both the cookies and the frosting filling.

Cookie Ingredients:

  • sugar
  • butter
  • egg yolks
  • vanilla
  • flour
  • baking soda
  • cream of tartar

Frosting Ingredients:

  • butter
  • powdered sugar
  • vanilla
  • milk

Instructions

A few basic steps are all it takes to make these deliciously simple cookies.

Cookie Directions

Step 1: In a large mixing bowl, cream sugar and butter together.

Step 2: Add egg yolks and vanilla. Beat again.

Step 3: Add flour, baking soda, and cream of tartar. Beat again.

Step 4: Form dough into tablespoon-size balls and flatten them gently.

Step 5: Place them in an air fryer basket lined with parchment paper 2 inches apart. You will have to bake these in batches.

Step 6: Air fry at 350ºF for 7 minutes or until golden brown and slightly cracked on top.

Frosting Directions:

Step 1: In a medium mixing bowl, cream butter and powdered sugar together.

Step 2: Add 2 tablespoons of milk and vanilla. Beat well. (If it is too thick, add more milk. If it is too thin, add more powdered sugar. )

Assembly Directions:

Step 1: Place sprinkles in a shallow bowl.

Step 2: Make whoopie pies by filling two cookies with frosting.

Step 3: Roll each whoopie pie in sprinkles to coat the edges.
