Instant Pot BBQ Chicken Pasta
I love cooking with chicken. It's a great protein source because it goes so well with almost any flavor profile. I decided to get extra creative with it for this recipe, combining BBQ sauce, cheese, cream, and Italian seasonings to create a rich, creamy dish that's as interesting as it is delicious.
Ingredients
It doesn't take much to make this meal, which is what it's all about when you want a quick, delicious meal.
- spaghetti
- water
- chicken breast
- olive oil
- salt
- pepper
- garlic powder
- onion powder
- Italian seasoning
- honey BBQ sauce
- diced tomatoes
- heavy whipping cream
- cheddar cheese
- parmesan cheese
Instructions
It only takes a few simple steps to make this delicious meal.
Step 1: Place spaghetti into your Instant Pot in a criss-cross pattern.
Step 2: Add water.
Step 3: Place trivet in above spaghetti.
Step 4: In a large mixing bowl, combine chicken, olive oil, 1/2 tsp salt, 1/4 tsp pepper, 1/2 tsp garlic powder, 1/2 tsp onion powder, and 1/2 tbsp Italian seasoning. Stir until chicken is evenly coated.
Step 5: Place chicken on the trivet above pasta.
Step 6: Place lid on and pressure on high for 6 minutes.
Step 7: Allow natural pressure release for 10 minutes, then quick release.
Step 8: Remove chicken. Brush with BBQ sauce, cut into small chunks, and set aside.
Step 9: Strain pasta.
Step 10: While still in the strainer, add diced tomatoes to the pasta. Stir, allowing the tomato juice to strain as well.
Step 11: Pour heavy whipping cream into your empty pot with 1/2 tsp salt, 1/4 tsp pepper, 1/2 tsp garlic powder, 1/2 tsp onion powder, and 1/2 tbsp Italian seasoning.
Step 12: Sauté on high.
Step 13: Next, add 1 cup shredded cheddar cheese. Stir contents together and allow to cook for 3 minutes.
Step 14: Add remaining 1 cup of cheese and stir together.
Step 15: Bring to a boil, stirring often. Allow to cook and thicken for about 5 minutes. Continue stirring often.
Step 16: Add pasta and tomatoes.
Step 17: Stir together until pasta is coated with sauce.
Step 18: Add chicken and serve!
