Strawberry Jello Cheesecake - No-Bake!

No-Bake Strawberry Jello Cheesecake

I love cheesecake, but I've never been a fan of doing it the old-fashioned way. I just don't have the time or the patience for water baths and lowering oven temps, making sure the door isn't opened, slowly cooling, and all the other hubbub that goes into baking cheesecake. That's why I love this no-bake wonder.

Ingredients

You'll only need a few simple ingredients to make this delicious cheesecake. You'll find them all easily at your local grocery store.

  • vanilla wafers
  • granulated sugar
  • unsalted butter
  • cream cheese
  • heavy cream
  • strawberry jello
  • water
  • powdered sugar
  • vanilla extract

Instructions

This recipe only takes a few simple steps, and they're all incredibly simple.

Step 1: Pulse vanilla wafers in a food processor until it resembles crumbs. Transfer crumbs to a bowl.

Step 2: Add 1/2 cup granulated sugar and melted butter. Using a fork, combine well.

Step 3: Spray a 9-inch springform pan generously with cooking spray and press the mixture into the bottom of the pan and slightly up the sides. Chill in the freezer for at least 30 minutes.

Step 4: In a large mixing bowl, beat together cream cheese and 1 cup granulated sugar with a hand-held mixer until smooth and creamy. Set aside.

Step 5: In a separate bowl, whisk together strawberry jello and boiling water until dissolved and set aside.

Step 6: In a separate medium bowl, whip heavy cream, vanilla extract, and confectioners sugar until stiff peaks form.

Step 7: Combine half of the whipped cream mixture with the strawberry jello mixture and the other half with the cream cheese mixture.

Strep 8: Spread cream cheese mixture over chilled crust.

Step 9: Next, spread jello mixture on top.

Step 10: Chill in the fridge for at least 4 hours or overnight before serving.
