Chicken paprikash is a delicious Hungarian chicken dish that I've been making regularly since I discovered it a few years ago. With this recipe, I wanted to do something a little different. So I took all those delicious flavors and turned it into a soup!

1: Saute the vegetables and paprika in butter until tender.

4: Remove from heat and add chicken and sour cream.

Why is rotisserie chicken used in this recipe?

Rotisserie chicken is pre-cooked, so it can be added to the soup at the end. The hot soup warms it through, and it keeps the chicken from falling apart if it were simmered.

Why did my sour cream curdle?

If you don't remove soups from the heat before adding sour cream, the high heat will cause the sour cream to curdle. There's no saving it after that.

Chicken paprikash soup takes the classic flavors of Hungarian chicken paprikash and transfers them to a hearty, delicious soup.

Ingredients

  • 3 tbsp butter
  • 1 medium onion, diced
  • 1 red, yellow, orange, or green pepper, diced
  • 2 tsp paprika
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tbsp cornstarch
  • 14 oz can crushed tomatoes
  • 2 cups chicken broth
  • 3 cups rotisserie or leftover chicken, cut into small chunks
  • ¾ cup sour cream
  • OPTIONAL: garnish with thinly sliced green onions

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add onions, peppers, and paprika. Stir and saute until onions and peppers are tender.
  3. Add salt, pepper, cornstarch, and tomatoes.  Continue cooking and bring to a simmer.
  4. Slowly add chicken broth, stirring continuously. 
  5. Reduce heat to low, cover, and simmer for 20 minutes.
  6. Remove from heat.  Add chicken and sour cream.  Stir until well combined.
  7. If you choose, sprinkle green onions on top and serve.
